5150 SLGM has an interesting new encounter - Breaking and Entering. It was one I had decided I needed for my on-going 5150 campaigns. But the encounter in SLGM was too specific to the set of linked scenarios and wouldn't fit easily into my games. So I have done some tweaking and come up with a possible generic B &E encounter. I like it. You could probably alter it for Fantasy gaming as well. Reduce the difficulty of raising an alarm (although possibly increase the chance for a guard dog, maybe?), but maybe make it harder to actually find something of use due to lack of light sources.
Of course, if you have magic in your game, leaving "magical fingerprints" might be something to avoid. I wonder what crime would look like if the the local PI can just look into a crystal ball and see the last person to touch an object?

You would see more use of a fall guy to enter/steal whatever, then end up in a river somewhere, or a Troll's tummy.
